There is another, simpler recipe for tarte au sucre that
my old Quebecoise landlady used. It is more caramely (?)
than the other recipe.
Mado's Tarte Au Sucre
Prepare:
one pie shell, unbaked
Mix:
2 cups brown sugar (the darker the better)
@ 1 cup whipping cream
Pour the sugar mixture into the pie shell and top with
Grated maple sugar (optional)
Bake at 350C until it's done..(Sorry, I never time this.
Until it has sort of hardened into a flattish caramel.)
